A Tagine is a type of dish found in the North Arican cuisine of Morocco - and is named after the special type of pot that it is cooked in.

This type of pot consists of two parts, a base unit which is flat and circular with low sides, and a large conical dome-shaped cover that rests inside the base unit when cooking. The cover is designed to allow any moisture produced during the cooking process to drip back into the food, producing an incredibly tender, succulent dish.
