bottling and storing preserves

Bottling and preserving

There are many methods of preserving and bottling fruits, we suggest to achieve the best results you should always follow a trusted recipe and follow the instructions exactly. Here we have listed a few basic rules to ensure successful preserving:
  1. Always clean jars before use. Wash the jars thoroughly and rinse in clean hot water, ensure the surfaces are free from chips, scratches or any remnants of food.
  2. Avoid the use of metallic or abrasive sponges and allow the jars to dry naturally.
  3. When preserving any food it is essential to sterilize before use.
  4. Rubber seals can be dipped in boiling water before use to sterlize them.
  5. Fill the jar and leave appropriate space between the preserve and underside of the lid (usually 1-2 cm).
  6. Ensure the jar rim is perfectly clean and the rubber rings are positioned correctly.
  7. Close the jar lid and secure the clip.
  8. Process the jars using your preferred method or following your recipe instructions.
  9. As the jars cool the clip holds the lid firmly in place while the vacuum is forming.
  10. After the jar has cooled check a vacumm seal has formed bt releasing the clip. the lid should reamin firmly attached to the base. If a vacuum has formed, close the clip and store in a cool dry place, away from the light.
